FROM THE KITCHEN OF CAPTAIN RICKS SHANTY

SCALLOP CHOWDER SOUTHERN STYLE

  • 1 PINT SHUCKED SCALLOPS
  • 3 POTATOES
  • 1 SMALL ONION
  • 2 CUPS MILK
  • SMALL AMOUNT OF CORN STARCH
  • 1 STICK REAL BUTTER

  1. CUT POTATOES IN SMALL CHUNKS AND COOK IN MILK UNTIL DONE
  2. WHEN POTATOES ARE HALF COOKED ADD DICED ONION
  3. MELT BUTTER IN PAN AND ADD SCALLOPS, SIMMER UNTIL SCALLOPS ARE DONE
  4. MIX ALL INGREDIENTS TOGETHER AND SIMMER, ADD SALT AND PEPPER TO DESIRED TASTE
  5. WHEN CHOWDER IS COOKED ADD CORN STARCH BY THE PINCH TO THICKEN TO YOUR LIKING

MAKES FOUR CUP SIZE SERVINGS
FOR MORE JUST DOUBLE INGREDIENTS
