Redfish on the Grill, Southern Style

Ingredients: serves two hungry anglers

  • 2 to 4 redfish filets depending on your appetite
  • 1 large Vidalia or sweet onion, you do not want a hot onion
  • Roll of aluminum foil
  • 1 stick real butter

Salt and pepper your fish,
Take your foil and roll it out about 14" and fold all four sides double.
Place this on your gas grill on medium heat and add butter. Slice your onion and place in the melted butter and cook until onions are done.
Place your fish filets on top of onions and cook until fish is white and flaky but not overdone where it is falling apart.

Caution; serve with a spatula to keep your fish intact

Serve fish with French fries or baked potato and a nice garden salad.
