BAR-B-QUE RIBS
FROM THE SHANTY OF CAPTAIN RICK

ONE OR TWO SLABS OF LEAN PORK SPARE RIBS, SALT AND PEPPER AS DESIRED


IF YOU ARE HANDY IN THE KITCHEN YOU CAN MAKE YOUR OWN SAUCEIF NOT I LIKE TO START WITH KRAFT AND SPICE IT UP, SOME LOUISANA HOT SAUCE, A LITTLE SHOT OF PICKLE VINEGAR.
A DASH OF YELLOW MUSTARD, A SHOT OF SYRUP TO GIVE IT BODY.

I PREFER TO USE A SMOKER WITH REAL OAK WOOD, KEEP YOUR TEMPERATURE AROUND 300 DEGREES WITH NO FIRE DIRECTLY UNDER THE RIBS, THEY WILL BURN EASY! COOK RIBS UNTIL TENDER BUT BE CAREFUL YOU DON'T DRY THEM OUT. WHEN YOUR RIBS ARE DONE ADD YOUR SAUCE, BRUSH IT ON WITH A 2" PAINT BRUSH AND TURN OVER AND BRUSH THE OTHER SIDE. DO THIS TWICE AS THE SAUCE COOKS TO THE RIBS. IF YOU HAVE GUESTS THAT DON'T LIKE SAUCE, BASTE ONE SLAB AND NOT THE OTHER. WINN DIXIE USUALLY HAS VERY GOOD PORK RIBS

POTATOE SALAD OR COLD SLAW AND BAKED BEANS MAKE VERY TASTY SIDE DISHES
